Samenvatting

Dit rapport is het resultaat van een literatuuronderzoek naar drijvende krachten, ofwel maatschappelijke ontwikkelingen en trends, die invloed hebben op de voedselconsumptie en het voedselaanbod. De meeste krachten spelen zowel in Nederland als mondiaal een rol. De drijvende krachten kunnen ingedeeld worden over demografische, economische, sociaal-culturele, technologische, ecologische en politieke factoren (DESTEP). De drijvende krachten vormen belangrijke input voor het interpreteren van de veranderingen in de Nederlandse voedselconsumptie en het verkennen van de toekomstige voedselconsumptie. De belangrijkste drijvende krachten zijn de groei van de wereldbevolking, klimaatverandering, globalisering, stijgende welvaart, stijgende voedselprijzen en technologische innovaties. • De groei van de wereldbevolking leidt wereldwijd tot een grotere vraag naar voedsel. Dit kan leiden tot de uitputting van de hulpbronnen, vooral in ontwikkelingslanden, waardoor de voedselproductie in gevaar komt • De verandering van het klimaat bepaalt waar en wanneer ons voedsel verbouwd kan worden. De gevolgen van de klimaatverandering zijn ook merkbaar in Nederland, maar in overige delen van de wereld zal het nog meer effect hebben. Klimaatverandering heeft ook effect op migratie. Door migratie zal de competitie voor voedsel en water toenemen. • Door globalisering is het aanbod sterk uitgebreid. Door fusies en machtsconcentraties wordt het aanbod steeds meer bepaald door een steeds kleinere groep internationale bedrijven. • Door de stijgende welvaart mondiaal neemt de vraag naar vlees en zuivel in hoog tempo toe. De consumptie van dierlijk eiwit (vooral vlees) leidt tot meer uitputting van de aarde dan de consumptie van plantaardig eiwit. • De verwachting is dat de voedselprijzen in de toekomst zullen stijgen. De welvaart in een land bepaalt hoeveel mensen bereid zijn te betalen voor voedsel. Binnen Nederland zullen er groepen zijn die moeite hebben om deze hogere prijzen te kunnen blijven betalen. Dit is bepalend voor hun voedingspatroon. • Bij technologische innovaties gaat het bijvoorbeeld om nieuwe voedingsbronnen (zoals algen of insecten), bestrijdingsmiddelen, wijzen van transport, toevoegingen en bereidingswijzen. Dit rapport is een achtergrondstudie voor de rapportage ‘Wat ligt er op ons bord? Gezond, veilig en duurzaam eten in Nederland’ van het RIVM die op 24 januari 2017 is verschenen. Hierin worden de aspecten van gezond, veilig en ecologisch duurzaam voedsel geïntegreerd weergegeven.

Abstract

This report is the result of a literature study of driving forces, or societal developments and trends that affect our food consumption and food supply. Most of these driving forces play a part in the Netherlands as well as worldwide. A distinction can be made between demographic, economic, socio-cultural, technological, environmental and political/legal driving forces (DESTEP).

Driving forces are considered to provide essential input for the interpretation of changes in the Dutch food consumption and for forecasting the future food consumption. The most important driving forces are the growing global population, climate changes, globalization, increasing welfare level, increasing food prices and technological innovations.

• Growing global population results worldwide in an increasing demand for food. This may lead to a depletion of resources, especially in developing countries, through which the food production is threatened.

• The climate change determines where and when our food can be grown. The consequences of climate change are also noticeably in the Netherlands, but especially in other parts of the world. Climate change also affects migration. As a result of migration, the competition for food and water will increase.

• Due to globalization, the food supply will be greatly expanded. Due to fusions and concentrations of authorities, the food supply is increasingly determined by a small group of international companies.

• Due to the growing welfare level worldwide, the demand for food and dairy increases rapidly. The consumption of animal protein (especially meat) results in more earth depletion compared to the consumption of vegetable proteins.

• It is expected that food prices will increase in the future. The welfare level in a country determines the price that people will pay for food. In the Netherlands, some lower socio-economic groups will struggle to pay these higher prices. This will determine their diet.

• Technological innovations include for example the development of new food sources (e.g. algae or insects), pesticides, modes of transport, additives and preparation.

This report is a background study for the report, ‘What is on our plate? Safe, healthy, and sustainable diets in the Netherlands’ which was published on the 24th of January 2017. In this report, healthy, safety and sustainability aspects of food are integrated.
